OMED Arbequina Extra Virgin Olive Oil

This early harvest EVOO is grown and produced by millmaster Juan de Dios Garcia Casas in Granada, Spain. The pits of the olives are incinerated, powering 40% of the mill’s energy needs.

Tasting Notes: The arbequina aroma is reminiscent of green banana with hints of green apple. The aromas follow through to the palate, recognizing the astringency of the green banana and even a slight nuttiness of green almond. The arbequina has a soft finish, but still a bit of pepper at the end.

Recommendations: Perfect to finish delicate fish dishes. It works on all kind of salads and vinaigrettes and adds flavor without overpowering dressings or aioli. O-Med arbequina EVOO is very recommendable for baking and desserts, including olive oil ice cream.

Item of the Day: Choice Beef Brisket

By | Chef's Feed, Desserts, Gourmet, Holiday, Item of the Day, Meats, What Chefs Want

Choice Beef Brisket

Brisket is a cut of meat from the breast or lower chest of beef or veal. The beef brisket is one of the nine beef primal cuts, though the precise definition of the cut differs internationally. The brisket muscles include the superficial and deep pectorals. As cattle do not have collar bones, these muscles support about 60% of the body weight of standing/moving cattle. This requires a significant amount of connective tissue, so the resulting meat must be cooked correctly to tenderize the connective tissue.
